Raised in a family steeped in culinary tradition, my early departure from school to explore the world initially led me to construction before I discovered my true calling in the kitchen with the British Armed Forces. My culinary journey has taken me from London’s Michelin-starred restaurants as a sous chef, to leading my first Head Chef role in the Lake District, at a venue celebrated for its fresh dairy and meat. I ran the growing and harvesting cycles of our on-site kitchen garden and find that connection to produce from my roots in Scotland on the family farm.
After garnering numerous awards, I returned to Liverpool, where I’ve cooked for celebrities and led prestigious venues like Alma de Cuba and James Street Hotel. Now at Daffodil, I am excited to start our adventure to create something truly special.
To serve in my home city, in an icon of our local heritage is a dream. Especially given the link the vessel has to British naval history and the ‘Royal’ title she once held – we are a chain-link in the line of its true, rich past. It’s an honour and it means a lot to me.

As Head Chef, I guide menu development and overall kitchen operations, supported by talented Sous Chefs, a creative Pastry Chef, diligent line cooks, and essential kitchen assistants and porters. We emphasise preparation, teamwork and maintaining high standards during peak service, ensuring that every guest enjoys a seamless dining experience. To be hosted in style.
